Feeling Saucy

 Today I got three more freezer chickens stocked and a massive heap of tomatoes sauced.

I love having ready made pasta sauce in our pantry.  This year's recipe included: eggplant, zucchini, wine cap mushrooms, puffball mushroom, red and white onions, garlic, garlic scapes, green, red and banana peppers and, of course, tomatoes -  all from our garden (except the puffball).  Tomorrow we are going to boil the sauce down nice and thick and then can it in litre jars.

I have one more freezer chicken to make into bone broth, one meat chicken who is down for the count and is not going to make it another month, a tree full of ripe crab apples that are ready to be turned into jelly, and a whole bunch of peaches that are destined to become jars of Drunken Vanilla Bourbon Peaches (perfect over homemade ice cream).  Tomorrow will be another busy canning day but with Liam at the cottage with Grandma and Seamus fishing with Daddy, I should hopefully get some time during Ali's nap to make some good progress on at least a few of these chores.


Our pantry is starting to fill up.  I love it!
