Salsa Sunday

 After a very busy morning of mucking, weeding and harvesting, we were free to spend the afternoon at the dentist - woohoo.  Just routine cleaning and check ups for the boys. Happily no one had cavities and we found out that Liam has grown his first two molars!  

During our dentist visit, we left Daddy and Alistair at home on salsa duty.  We have been working on harvesting, washing, and chopping since yesterday but this afternoon everything finally came together.


Recipe: Gael Glen Farm's Salsa

14 lb tomatoes, cored and chopped
6 jalapeños, chopped and seeds discarded
10 green peppers, chopped
2 1/2 lb of onions, chopped.
1 cup cider vinegar
1/2 lemon juice
1/4 cup salt
1/4 cup sugar
2 tsp ground cumin
12 cloves of garlic
5 Tbsp Clubhouse taco seasoning
2 Tbsp oregano

Mix and boil for at least 15 min.

Fill sterilized 1 L jars and water bath for 15 min.

Yield: 10 L

We ate fresh salsa for supper and cooked up the rest, storing two jars in the fridge and then water bathing the remaining seven jars for longer term storage in the pantry.

Even after all that salsa we still had tomatoes left over, so we canned another six jars of stewed tomatoes.

What a busy, busy day.  We are all tired out and the boys are filthy from all their outdoor play and helping out.  In the most adorable bath time moment ever, Seamus asked for Liam's help (Liam's not Mama's) to scrub the dirt off the bottoms of his feet.  This "big brother taking care of little brother" moment pretty much melted my heart.
