You know what is an underrated vegetable? Swiss Chard. You only need to plant it once, right at the beginning of the growing season, and then you can harvest it right up until to frost. It is colourful and mild tasting. The kids like it . It is easy to harvest, clean and cook and it is quite versatile in its uses. For example, it paired really well with our lamb chops for supper tonight.
A big thanks to Liam for harvesting tonight's side of swiss chard all by himself. Actually, a big thanks to all my helpers today. I had mini bread bakers, mini pumpkin puree-ers, and mini muffin makers. They also helped by being very good (not mini at all) eaters. I am one lucky mama.
Behold Liam and Ali's banana, red currant, rhubarb, pumpkin seed muffins. Delicious! |
