Being PC About CP

Chicken processing is not the topic for everyone.  It is a reality on a farmstead like ours that prioritizes homegrown, happy, healthy meat but butchering day is not fun.  Today we got through half of our meat birds.  Tomorrow we will do the rest.  In order to be tender, the meat needs to rest in the fridge for 2-4 days before being packaged for the freezer.  Needless to say, we currently possess a fridge very full of bird.
