An Exciting Edible Surprise

Nothing improves my day like finding wild edible mushrooms in our goat paddock.  Seamus and I happened upon a patch of Shaggy Manes this morning!  I know we cultivate our own mushrooms already but I just love edible surprises.




We fried our foraged mushrooms up with our onions, garlic and our last eggplant and wine caps to make a Shaggy Mane & Roasted Kale lasagne.  With a side of homegrown lettuce tossed with homemade caesar salad dressing and chocolate mint cookies for dessert, we were in business.



We are eating well here on Gael Glen Farm tonight!
