It's the Least I Could Do

When my wonderful husband works all day and still manages to get the building materials for my new donkey barn,




build a temporary fence to keep my sheep safe from a coyote,


and set a trap for said coyote where it came through the fence



- the least I can do is make him his favourite pie.

Fresh Niagara peaches.

Boil for 1 minute.

Ice bath.

Remove peel.

Slice into 1/3 inch pieces, mix with 1 cup sugar and let sit for 1 hour for the juice to drain.

Make pastry.

Fill it up.

Bake.

Cool.
